Desi Lounge Canberra is seeking a skilled and passionate Cook to join its kitchen team on a full-time basis. The successful applicant will prepare and cook authentic Indian dishes using traditional recipes and techniques while maintaining exceptional quality, consistency and presentation. The role also involves supporting menu development, maintaining kitchen efficiency and ensuring compliance with food safety standards in a fast-paced restaurant environment.

Task & responsibilities

  • Prepare and cook a variety of authentic Indian dishes, including curries, tandoori items, rice dishes, breads and regional specialties, in accordance with established recipes and customer orders.
  • Prepare, season and cook meats, seafood, vegetables and vegetarian dishes using traditional Indian herbs, spices and cooking techniques.
  • Ensure all meals are presented to the highest standards of quality, taste and consistency.
  • Assist in planning and refining menus, including introducing seasonal and regional Indian specialties.
  • Monitor food preparation and cooking processes to maintain quality and minimise wastage.
  • Maintain a clean, organised and efficient kitchen environment and ensure compliance with food safety and hygiene standards.
  • Monitor stock levels and assist with ordering ingredients, including specialty spices and authentic Indian produce.
  • Collaborate with the Chef and front-of-house team to ensure timely service and customer satisfaction.
  • Support and mentor junior kitchen staff as required.
  • Assist in maintaining workplace health and safety standards and kitchen operational procedures.

Qualification & experience

  • Relevant Certificate IV in Commercial Cookery or higher qualification preferred. 
  • Minimum 2–3 years of relevant experience as a a Cook/Chef in a fast-paced cafe, restaurant, or similar hospitality environment.
  • Strong skills in food preparation, presentation and quality control.
  • Excellent communication, teamwork and time management skills.
  • Food safety and hygiene certification or willingness to obtain.
  • Demonstrated knowledge of authentic Indian cuisine, traditional cooking methods and spice combinations (Preferred).
